Holds are managed by hand
A note or a chat message to the store, and nothing releases it when the hold lapses. Sellable stock sits still at the counter.
Notification and hand-over are left to the store
Who tells the customer it is ready, and what it is checked against on arrival, are undefined — so the counter takes time.
